One night, during the COVID-19 lock-down, in an attempt to make a quick yet tasty gluten free mac and cheese for myself, I grabbed the only gluten-free noodles I had left. They so happened to be the millet and brown rice ramen from Costco. Adding a few simple ingredients I had on hand, I threw something together that turned out quite good if I do say so myself. Check out the recipe for it below.
-Millet and brown rice ramen (2 pieces)
-1/2 cup shredded vegan cheese (my favorites are the Violife and Follow your Heart brands)
-1 TB vegan butter (I’ve been loving Earth Balance lately)
-Everything but the bagel seasoning (to taste)
Cook the ramen according to the directions on the package. Once cooked, drain the water out and add the cheese, butter, and seasoning on top of the ramen, cooking on low and stirring to combine, until the cheese and butter is melted. And that’s it! It’s so simple, but so good if you are craving mac and cheese. It literally comes together in minutes, so if you need a quick, tasty, and comforting meal (because let’s be real, this is comfort food), you gotta try this recipe!
Makes 1 serving
P.S. You can use other pasta in place of the millet rice ramen. So feel free to sub in about a cup of dry pasta of whatever you have on hand.
