Before going vegan, a frequent dinner in our house was taco nights. They were easy to make, everyone loved them, and they were pretty cheap to make. Since going vegan in January 2018, finding a homemade, easy, cheap, vegan recipe for taco meat that everyone enjoyed was a challenge. One night, I threw some things together and hoped for the best and it was a success! I have tweaked the recipe since that fateful night and recently measured out the exact amounts so I can share this recipe with the rest of you. Vegan and non-vegan family members alike have enjoyed this recipe so if you’re looking for a vegan taco meat recipe, I hope you give this recipe a try.
-2 blocks of high protein organic super firm tofu (specifically the Trader Joe’s brand, see photos of it towards the end of this post)
-¼ cup avocado oil (or another neutral cooking oil)
-3 TB taco seasoning
-¾ cup gluten-free panko
-1 cup water (divided)
Start by pouring the oil into a large cooking pan and heating it on low heat. As you do this, crumble up the tofu into the pan, adding the water from the tofu containers into the pan too. Crumble up the tofu until it is the texture you want. I crumble mine up pretty small so that it can absorb the flavors of the taco seasoning better. Once you’ve finished this task, add in the taco seasoning, panko and ½ cup of water, turning up the heat to medium high until the tofu is warm, stirring frequently. Once the initial ½ cup of water has dissipated, add in another ½ cup of water (about 2-3 minutes after the first ½ cup of water). Once the tofu is warmed (it takes about 5-6 minutes), turn down the heat to medium low and cook for another 5 minutes, stirring occasionally. And that’s it! You may want to let it cool for a few minutes before serving, especially if you have little ones who will be eating the tacos too.
Makes around 6 cups of tofu taco meat
Total time required to make: 15 minutes (although with my little people roaming about and needing assistance frequently when I cook I usually give myself about 30 minutes).
If you only need to make enough to feed 4-5, here is the amounts you will need:
-1 block of tofu
-2 TB oil
-1 ½ TB taco seasoning
-¼ cup and 2 TB gluten-free panko
-½ cup water
Note: If you don’t have a Trader Joe’s near you to get the specific tofu I list in the recipe, you can use extra firm tofu, just don’t add any water beyond what is in the tofu containers. The texture will be a bit more mushy but it still tastes good. I have made it both ways, and although me and my family prefer it with the high protein Trader Joe’s tofu (the high protein tofu has a firmer and more “meat” like texture), it is still good either way.
If you don’t have to be gluten-free, feel free to use regular panko.
